This sophisticated cocktail from Taiwan is a unique collection of flavours, that include cumquats, shiso leaves, ginger and pineapple textured over a solid mix of Midori and gin, yet remains light but retains enough body to accompany the red bean cakes.

Ingredients - Okinawa Island - (1 glass)
| GIN | 45ml(1 1/2oz) |
| MIDORI | 20ml(2/3oz) |
| Pineapple juice | 30ml(1oz) |
| Fresh Ginger | 5 slices |
| Kumquat | 1 pc |
| Purple perilla leaves | 2 leaves |
| Lemon | half |
| Sugar | 2 spoon |

Mixing Instruction - Okinawa Island -
- Muddle solid ingredients well, then add Midori, Gin, juice and ice. Shake vigorously.
- Double strain into a chilled cocktail glass or ceramic bowl
- Garnish with a whole Perilla leaf.

- The Japanese Shiso is also known as Perilla, Purple Mint and Japanese Basil.
